Spoil your guests this Chirstmas Eve with these amazing roasts by Suzy Spoon Vegetarian Butcher. This beautiful festive roast is the perfect centre piece for the party. It is a delicious roulade of seitan, nuts, cranberries and traditional herbs with a delicious flavoured crunchy outer layer. It also comes in a Gluten free variant which, in our opinion, is far tastier! This roast is Perfect with roast veggies, gravy and yorkshire pudding.
When cooked it will expand in size to approx 20cm x 35cm. This is to be taken as a rough guide only. Each roast is made by hand, so the shape may vary slightly, but the weight of each roast is the same. The ingredients are : Tofu, gluten flour, rice, onion, water, bread crumbs, mushrooms, plain flour, olive oil, dried cranberries, walnuts, soy sauce, yeast flakes, garlic, miso, parsley, sage, rosemary, thyme, salt, black pepper and sesame oil.
The Gluten free variant of the roast contains: tofu, rice flour, tapioca starch, corn starch, onion, mushrooms, red rice, butter beans, olive oil, cranberries, walnuts, tamari, savoury yeast, garlic, miso, parsley, sage, rosemary, thyme, black pepper, vegetable gum (hydroxypropyicellulose) xanthin gum (corn derived), diphosphate, sodium carbonate, salt and sesame oil.

Christmas Eve Delight
Feeds 4 but can be altered to any copacity.
You will need for the Roast:
Olive Oil
Either the Original Festive Roast or the Gluten Free variant by Suzy Spoon
Tray
Method:
Thawing: If frozen, place in fridge to thaw 1-2 days before you want to eat it. If still frozen when you are placing in oven put foil over baking dish at 180 °C. This is so the top doesn't burn too quickly and then cook until heated all the way through.
Cooking:
Pre heat oven to 180 °C.
Cut plastic wrap off Roast, Place in oven dish or tray and bake for approx 40mins or until heated all the way through (add oil if it needs it).
Poke a skewer through Roast to make sure it's hot all the way through.

You will need for the Veggies:
2 cup broccoli florets
2 cups cremini mushrooms
2 cups chopped butternut squash
1 zucchini, sliced and quartered
1 yellow squash, sliced and quartered
1 red bell pepper, chopped
1 red onion, chopped
2 tablespoons olive oil
2 tablespoons balsamic vinegar, or more, to taste
4 cloves garlic, minced
1 1/2 teaspoons dried thyme
Kosher salt and freshly ground black pepper, to taste
Method:
Preheat oven to 425 degrees F. Lightly oil a baking sheet or coat with nonstick spray.
Place broccoli florets, mushrooms, butternut squash, zucchini, squash, bell pepper and onion in a single layer onto the prepared baking sheet. Add olive oil, balsamic vinegar, garlic and thyme; season with salt and pepper, to taste. Gently toss to combine.
Place into oven and bake for 12-15 minutes, or until tender.*
Serve immediately with Roast and Gravy.
You will need for Gravy:
Plantasty Foods Vegetable Gravy Mix (sold here at The Healthy Hub)
3 tbs (30g)
1 cup (250g) of cold water
Method:
Whisk togther in a small saucepan.
Place on low heat.
Whisk while bringing it to boil.
Once thick and glossy serve hot.
